Many new games borrow mechanics from successful titles rather than experimenting. Is innovation becoming riskier for developers, or do players simply prefer familiar gameplay?

The devs are scared of building a project that doesn't succeed within a period. They want to follow a successful route instead of trying to build their path.

Sometimes, it works for them, but in most cases, devs that are brave enough to carve a niche for their game are more successful, if the game they built became a household name in the industry.

There might be multiple reasons and one od them is related to innovation risk. Also, developers often have limited budgets, tight deadlines, and player expectations to consider. A new mechanic might sound exciting but could confuse players or disrupt balance.

Many developers are too frighten to take the chance, meanwhile you have expedition 33 coming in and showing how it is done.

I am not exactly sure but I believe they are afraid of using untested mechanics and also do not want to take a risk of alienation of mainstream audiences. Budget constrains might be another reason.
